Can You Eat Mushrooms Raw?

The simple answer is that not all mushrooms are safe to eat raw. While some varieties may be edible in their raw form, many mushrooms can be potentially harmful or cause digestive issues if consumed uncooked. It’s essential to recognize the difference and practice caution when incorporating mushrooms into your meals.

How do you ship?

As for shipping, we aim to dispatch USPS orders on the same day or within the next couple of business days, while UPS Ground orders may take up to 3 business days, depending on product availability. UPS Express (2nd day, Next Day Air, or Next Day Air Saver) orders require completion by 10 am PST for same-day shipment of dried mushrooms. If you’ve ordered fresh mushrooms, contact us to check for same-day shipping availability. We endeavor to have every order dispatched within 2 business days.

Delivery times are as follows:

  • USPS: Up to 2 weeks or longer, based on the current situation.
  • UPS Air Saver or Next Day Air: The next business day after shipping, from Monday to Saturday.
  • UPS 3rd Day: 3 business days after shipping.
  • 2nd Day: 2 business days after shipping.
  • UPS Ground: 7 business days after shipping, varying with location.

If you opt for overnight delivery without specifying a date, we will ship your order as soon as possible. Customers who provided an email address will receive delivery notices from the website and UPS. Please ensure someone is available to accept the delivery promptly, as mushrooms should not be left unattended and must be refrigerated or frozen upon arrival.

For storing fresh mushrooms, refrigeration is essential. Whether it’s morels, chanterelles, black trumpet mushrooms, or other wild or cultivated varieties, keep them in a plastic strainer covered with a dry hand towel. Avoid using plastic bags or closed containers, as mushrooms need proper air circulation to remain fresh. Use them within 5 days, and check them twice daily for any spoilage, discarding any bad mushrooms to preserve the others. If in doubt, dispose of questionable mushrooms, as consuming moldy ones can be harmful. Matsutake can be kept under a slightly moist towel to maintain their freshness. As for Hen of the Woods, Brown Beech, and White Beech mushrooms, leave them in their cello packs until ready to use, and they can last up to two weeks.

To store dried mushrooms, place them in the freezer immediately upon receipt.

For rehydration, the process differs based on the mushroom type. For morels, use 4 cups of liquid per ounce of mushrooms and let them soak for 20 minutes. Strain through a paper towel or filter, retaining the liquid for future recipes. For matsutake, portabella, sliced shitake, and other dried mushrooms (excluding whole shitake), soak them in 4 cups of cold water or cold liquid per ounce of mushrooms for 25 minutes. Strain through a coffee filter or paper towel, retaining the liquid if needed. For whole shitake, we recommend soaking them in water for at least 45 minutes, as they require more time to rehydrate. If preferred, you can also rehydrate mushrooms overnight.

Freezing fresh mushrooms is a viable option, as most mushrooms freeze well. However, due to our extensive range of mushrooms, we suggest looking up specific freezing techniques, or you can reach out to us for guidance.

As for truffles, they are a delicate delicacy that requires special care. We recommend replacing the paper towel daily, drying condensation from the container. Consume truffles immediately when they become soft. If you cannot finish a whole truffle before it becomes oily, making truffle butter is a great preservation method. Black truffles are best added at the end to sauces and risottos, stuffed into roulades and foie gras terrines, and combined with eggs, lamb, sweetbreads, seafood, poultry, or even black truffle ice cream. On the other hand, white truffles should be grated raw over pasta, eggs, and other dishes, as heat destroys their flavor.

While our mycelium powders are organic certified, we are actively seeking organic certification for other non-wild crafted mushrooms. It can be challenging to find certified organic dried mushrooms.
